Just a few steps down the street from Jun I, La Chronique is a Montreal staple since 1995.
For the 2018 edition of Montreal en Lumiere, chef owners Marc de Canck and Olivier de Montigny welcomed Julien Lefebvre, chef du Château Cordeillan-Bages for a three days event that swiftly sold out.
We enjoyed a deliciously posh menu in the great French haute cuisine tradition.
Menu:
Œuf, PDT douce, Caviar
Saint Jacques, Panais, émulsion oursins
The appetizer scored high with my two companions.
Flétan de l’Atlantique, Algues, sauce vierge
Pintade, Champignons des bois, Vin jaune
Cerf de Boileau, embeurrée de choux, truffe du Périgord
The chef’s piece de résistance was served Rossini style, the perfectly cooked venison topped with a large portion of foie gras.
Chocolat Saint Domingue, praline, framboise
With the meal we enjoyed the Podere San Cristoforo, Carandelle, 100% sangiovese, from Maremma, Tuscany.
