Back in 2012, when the Lyons-raised Daniel Boulud, arguably New York’s most famous chef, opened Maison Boulud in Montreal, it was the second Maison Boulud location, the first one being in Beijing. But, at the same time, it was the first restaurant he's ever owned in a French-speaking city.
As part of the 19th edition of the Montréal en lumière festival, Maison Boulud’s executive Chef Riccardo Bertolino and his guest, two Micheline stars chef Gaetano Trovato, offered us a menu that married classic French cuisine with charming Italian flavors.
Arancini – chef Riccardo
Potatoes, Quail Egg, Black Truffle – chef Gaetano
Tuna Belly, Puntarelles, Nasturtium – chef Riccardo
Wild Scottish Langoustine, Consommé Gelée, Fennel Cream and Herb Garden – chef Riccardo
Risotto Mantecato – Risotto with Tuscan Saffron and Piglet – chef Gaetano
Pigeon – Roasted Squab breast, Braised Leg Hazelnut Cookie, Pomegranate and Chestnut – chef Gaetano
Orange Sanguine et Pistachio – Pistachio Cream, Blood Orange, Crescenza Cheese Ice Cream, Olive oil and Citrus Juice – chef Claude
Perfectly executed desert packed with superb flavors.
We finished the meal with the delicious mignardises among which chef Boulud’s signature sweet madeleines.
The service was excellent, as one would expect from both the Ritz and a Daniel Boulud’s restaurant.
